Meet Margot Guillon and Pit Dolizy at the Clos du Fourschenhaff distillery in Eschweiler, located on the Ardennes plateau surrounded by forests. There, the couple transforms home-grown fruit into the finest alcohol, and do so with a great love of the craft. These products can of course be found at Letzshop.

Please introduce yourself

We are Margot Guillon and Pit Dolizy, and we are distillers with heart and soul in the small village of Eschweiler near Wiltz. Our artisan distillery was founded in 1980 and we are the second generation distilling since 1999.

Which fruit varieties can be found at Clos du Fourschenhaff?

More than 1500 trees have been planted in our 4.5 HA organic orchard on the Fourschenhaff on the Moselle. Here you will find mostly mirabelles, plums and damsons as well as 100 quince trees, various old varieties of high trunk apple and pear trees. We also grow special fruit such as medlar, wild service tree, European service tree or the fruit of the dogwood. We buy other types of fruit, which we don’t grow, regionally.

What is important to you when distilling?

We attach great importance to natural quality brandies. Since we are a small distillery, we can select the fruit ourselves and sort, mash and slowly distil it by hand. Our brandies consist exclusively of the ‘Cœur de Chauffe’, the middle part of the distilling process without adding sugar, flavouring, colouring and without filtering.

Your bestseller?

The organic mirabelle plum brandy, but also the gin. Our gin Wakelter 47% won the silver medal at the DLG in Germany and the gold medal twice at the Destillata in Austria.

Your favourite product?

Our last-born child from the distillery: the ‘Absinthe de Luxembourg’. This is the first absinthe to be distilled here in Luxembourg after Prohibition. And the basis for this high-quality spirit is alcohol as well as numerous herbs and, of course, neither sugar nor colourings or flavourings.
