Lola Valerius, who was born in Esch-sur-Alzette, is fascinated by chocolate. You can tell that she also studied architecture by the minimalist shape of the pralines, which are almost too beautiful to taste!

Please introduce yourself

After studying architecture in Vienna and Copenhagen, I decided to follow my heart, realise my dreams and open my own chocolaterie. I did my CAP Pâtissier at the École de Boulangerie et de Pâtisserie Paris before gaining my professional experience in Paris and Taiwan. Coming from a family of entrepreneurs, it was clear that I would also start my own business. In March 2021, I opened my very own chocolaterie in my hometown of Esch-sur-Alzette.

Chocolate makes people happy. This elegant and delicious product offers so many possibilities and challenges us every day to create the best possible quality for the customer.

Where does your inspiration come from?

Inspiration lurks around every corner and in all kinds of situations. It often comes when you are least looking for it whether I’m shopping, cooking or travelling.

What does chocolate mean to you personally?

Chocolate is a very exciting material for me. What wood is to carpenters and stone is to bricklayers, chocolate is to me. Chocolate has many facets that can be discovered and explored further and further. My material also has the advantage that it tastes delicious!

 

Your favourite product?

I love dark chocolate, so one of my favourite products is coffee beans coated in dark chocolate. They give you a quick energy boost and the sweetness of chocolate, the perfect combination.
